Soup, in a freakin’ squash bowl!


No resolutions here, just two and a half ladies trying to eat more vegetables.  So far, we’ve done great.  I’m particularly proud of this soup because I made it the day after we got home from vacation, and before we had time to go to the store.  The soup involved dried navy beans, a tired onion, canned tomatoes, and frozen spinach.  It was good, maybe mostly because we hadn’t eaten a vegetable or fiber in a week.  The squash bowl looked nice but didn’t taste very good, I think I overcooked, but it’s hard to say because I don’t like squash.
